No more flat high hydration loaves!!

The secret to perfect, random crumb Italian bread is high hydration dough. This allows for perfect texture, crumb and crust. Unfortunately, without support, you end up with a flat ciabatta loaf. This pan provides support and venting of Italian and French loaves, allowing for perfectly formed bread. Couldn’t be happier with the results.

Gluten free baking

I used Carol Fenster’s recipe for French bread with this pan and FINALLY got a loaf of gluten free bread with a crunchy crust. It works really well for a soft interior and a crispier crust.

Great bread pan!

This pan works great, even for my gluten free baguette batter which is soft and sticky! Rinses right off under the faucet.
